Chris and Natalie’s Fresh Summer Wedding

Every October I start to get a little sentimental, and I think its come a bit early this year. Jeff and I have started making plans with our families for Thanksgiving and Christmas and with all of the fall catalogs coming out and with everyone in cooler climates swooning over cranberry scones and Pumpkin lattes, I’m getting all wishy-washy for the holiday season – I know, already.  Halloween decorations haven’t even started showing up in the grocery store, and I’m already planning which holiday treats I’m going to make for appetizers at our Christmas party. How lame am I??

And to increase the lameness, I am seriously considering making some holiday baked goods this weekend just to get it out of my system. But to mask this lameness, I think I’m going to disguise them with some appropriate fall flavorings, a la cranberry-maple sugar cookie style.

So does anyone have some uber-fantastic fall-flavored snack/dinner/heavenly-baked-yumminess that you wouldn’t mind sharing? I would especially love to make something with pumpkin, but Jeff doesn’t like pumpkin so I would just end up eating everything by myself. Good for my soul, bad for my waistline. Hmmm, I think I’m ok with feeding my soul.

So any suggestions would be appreciated. As you can see, I have a Kitchen Aid just waiting to fill me with fattening yummy goodness.

Rylee Sundquist - Yes! I love fall baking – I’ve already gone a bit nuts. My husband told me he needs to stop eating cake and cookies so I should stop making them. Easiest yummy pumpkin recipe ever – 1 can of pumpkin puree, 1 box of spice cake mix, 1-2 cups chocolate chips. Mix it all together, make blobby scoops onto a cookie sheet and bake at 350 for 12-15 minutes. They are super moist, not too terrible or you and oh so delicious!

(you just can’t go wrong with Martha I tell you! haha ) I also love baking and fall really brings it out of me, I’ve been making cranberry orange scones for my morning tea lately and they’re also very yummy!
I’ve been using this recipe,http://allrecipes.com/Recipe/Cranberry-Scones/Detail.aspx and just use dried Cranberries, but I really want to try it with fresh ones too.

stan - since i’m always looking out for jeff, here’s my suggestion: replace the pumpkin in your traditional pie recipe with mashed sweet potato. lovely! and if you really want to blow some minds, bake a pie shell half full with sweet potato pie filling on the bottom (fully bake and cool), then fill the rest of the way with pecan pie filling and bake again. you’ll have a two layer sweet potato pecan pie that will wake me up from texas.

Angelica Thomas - Oooo, I have a fantabulous Pumpkin Cheesecake with a Caramel Swirl. The crust is made from gingersnap cookies! Yummy!!! I’ll find it and e-mail it to you.
