Happy Sunday morning everyone! As you read this post, Jeff and I are taking off with suitcases in tow once more. We'll be in the Cayman Islands this entire week, but this will be a very different job than our weddings and couples. Jeff and I are long time members of our church, The Rock, here in San Diego, and they have asked us to come along as part of their media team to photograph a week-long Do Something festival in the Cayman Islands. We are so excited to be a part of the team, but pray for some gnarly energy to make it through the full week of shooting! In the meantime, while I will be fighting my little bag of peanuts in coach, you can enjoy a meal that is about as easy as the Easy button itself. As you saw last week, I've been in a "figure it out as I go" kind of mood with cooking lately, so that's kind of how this recipe has come about. I already had a few orange and honey citrus flavored chicken recipes, but I felt like mixing things up a little bit. Don't be scared, I do it all of the time. Which probably isn't a good thing..
Anyhoo, I pretty much combined the ingredients that I enjoyed the most out of my honey/orange/citrus chicken recipes and came up with this little number - Ta-DAH!

The big players in today's game are honey and garlic...

Balsamic vinegar and orange juice...

And chicken! When I say that this is an easy dish, I mean E-ZAY! Basically you combine all of those wonderful ingredients together (balsamic, honey, orange, garlic, salt, pepper, and olive oil) and let the chicken marinate for a while.

Once all of the lovely flavor is soaked up after a few hours, place the chicken in a baking dish, cover it up, and let it cook for about 40 minutes at 385 degrees or so. Like I said, I'm no genius, so I kind of just go with it.

Uncover the chicken for that last two or three minutes in the oven and it will get all nice and glazed over. This chicken is even better slow-cooked on the grill, so give that a whirl when you can! Yummy!


Orange and Honey Glazed Chicken
- 2 tbsp extra virgin olive oil
- 1 tsp coarse sea salt
- 1 tsp pepper
- 2 tbsp balsamic vinegar
- 4 tbsp fresh orange juice
- 1/4 cup honey
- 4 cloves garlic, minced
- 4 boneless skinless chicken breasts, thawed
Pre-heat oven to 385 degrees Farenheit. Rub chicken with salt, pepper, and olive oil. Combine vinegar, orange juice, honey, and garlic in a separate bowl and add chicken. Cover and let marinate for up to 3 hours. Place chicken in a baking dish, cover, and bake in oven for 35-40 minutes, or until cooked through and juices run clear. Remove cover the last two to three minutes of baking to allow outside of chicken to glaze over.
